Sopa de Fideo is traditionally a Mexican soup. For this recipe, we will cook it into a tasty noodle dish that you can scoop up and eat with a fork.
INGREDIENTS
- 1 package of fideo noodles (Available in the Mexican section of the grocery store)
- 1 5.5 oz can of tomato juice
- 1 can of chicken broth
- 1/3 onion
- Cooking oil
DIRECTIONS
Finely chop up the onions. Take the fideo noodles and cook them with the onion in a bit of cooking oil. Extra-virgin olive oil will also work. Once the noodles have browned a bit, pour in the can of tomato juice until it soaks up into the noodles.
Slowly pour the chicken broth into the pan. Do not stir frequently, otherwise the noodles will get too mushy, but stir enough so the noodles don't stick to the bottom. Keep stiring until the broth gets cooked into the noodles.
